we open before you do, we roast in the back room, and yes, we will sell you a cake at 11pm.
One drum roaster, one person watching it, and a fan pointed at the door because that room gets hot by nine in the morning. Roast days are Tuesday and Friday.
If the bag you take home has a date written on the bottom in blue pen, that pen was mine. The scale is honest and the bag is a little heavy on purpose.
the fan is louder than the roaster. we have stopped apologising for it.

the phone rings in the kitchen, over the extractor fan. give it three rings before you give up on us.
Someone in your house forgot a birthday. This happens to us most weeks. Ring before 9pm and there will be a cake on the counter by 11: round, plain, piped cream, and the name spelled the way you say it rather than the way we would guess it.
Sunday nights we are asleep. Any other night, the phone is on.
